Casisano’s 2016 Brunello di Montalcino Colombaio is a classic example of one of Tuscany’s most esteemed wines. Created exclusively in red and classified as "secco" (dry), this Brunello is likely produced from 100% Sangiovese, known locally as Sangiovese Grosso. The 2016 vintage was widely celebrated in Montalcino, thanks to an ideal growing season that provided perfect ripening conditions. Fermentation typically occurs in stainless steel followed by long ageing in large Slavonian oak casks, helping to tame the grape’s tannins and accentuate its structure. The Colombaio cuvée reflects the house style, offering precision, balance and an elegant expression of the terroir.

Montalcino itself is set in southern Tuscany, where the rolling hills and the region’s diverse soils—ranging from galestro (marl) to clay and limestone—lend complexity and depth to the wines. The climate is Mediterranean, characterised by hot, dry summers and mild winters, which, together with significant diurnal temperature swings, help Sangiovese fully express its range of aromas. The Brunello tradition in this area dates back to the late 19th century and has since gained global recognition for producing robust, age-worthy wines that are both powerful and refined.

Pairing this Brunello with food is a delight: its firm tannins and structured profile make it an ideal match for rich Tuscan dishes such as wild boar ragù with pappardelle, bistecca alla fiorentina (Florentine T-bone steak), or aged pecorino cheese. Alternatively, traditional beef stews or roast lamb with Mediterranean herbs will highlight its savoury, earthy character.

Casisano’s Brunello di Montalcino is best decanted an hour prior to serving to allow its complexities to unfold. Enjoy it at a serving temperature of 16–18°C, which will showcase its full aromatic potential and silky texture.
