Adagio Aglianico del Taburno DOCG 2020 is a red wine that perfectly showcases the prowess of the Aglianico grape, often heralded as the “Barolo of the South.” This vintage, hailing from the sun-drenched slopes of the Taburno Massif in Campania, benefits from the combination of high-altitude vineyards and volcanic soils that shape its powerful yet elegant character. The vinification process generally involves extended maceration and ageing in both stainless steel and oak barrels, allowing for a harmonious integration of the robust tannins with the dark fruit intensity typical of Aglianico. The 2020 vintage is already revealing its potential, with aromas of black cherry, plum, wild herbs, and hints of spice and tobacco.
Campania, with its rich viticultural tradition tracing back to ancient Greece and Rome, offers a unique landscape for wine production. The region’s vineyards are often situated on volcanic soils, which lend a particular minerality and complexity to the wines. The climate is typically Mediterranean – hot, dry summers tempered by cool mountain breezes and mild, rainy winters – enabling a balanced and gradual ripening of the grapes. The Taburno area specifically is renowned for producing some of the finest expressions of Aglianico, which thrives in its stony, well-drained terroir.
Aglianico del Taburno’s structured yet balanced profile pairs beautifully with rich and savoury dishes. Try it with classic Neapolitan fare such as slow-cooked ragù, braised lamb shank or grilled beef, as well as local cheeses like pecorino or aged caciocavallo. For a regional touch, serve alongside “salsiccia e friarielli” (local sausage with bitter greens), which will complement the wine’s hearty flavour and firm tannins.
For the best experience, open and decant the wine for at least an hour before serving to allow its bouquet to fully emerge. Serve at a temperature of 16-18°C. This will accentuate both the wine’s aromatic complexity and its velvety texture on the palate.
