The 2000 vintage, now over two decades old, lends the wine remarkable maturity and complexity. Grown on the slopes of the Vosgros lieu-dit, a recognised Premier Cru plot within Chablis, these vines thrive in classic Kimmeridgian limestone and marl soils. The terroir imparts a distinctive minerality and rare elegance typical of high-calibre Chablis. Vinification is traditional yet meticulous at Droin, focusing on the precise expression of terroir and vintage. Ageing in stainless steel and a proportion of neutral oak allows both purity of fruit and nuanced development with bottle age.

Chablis is situated in northern Burgundy, where a cool continental climate dominates, encouraging slow grape ripening and high natural acidity. Kimmeridgian soils, rich in marine fossils, are crucial to the region’s unique style, gifting Chablis its hallmark minerality and freshness. The history of winemaking in Chablis stretches back to the Middle Ages, with the Premier Cru vineyards long recognised for their potential to yield wines of great finesse and longevity.
