Domaine Nicolas Rossignol’s Pommard Les Noizons 2018 is a striking example of the Côte de Beaune’s celebrated red wines. Produced solely from Pinot Noir, this cuvée comes from the Les Noizons climat, known for its prime south-east exposure and limestone-clay soils enriched with iron. The 2018 vintage was defined by a warm, sunny growing season that yielded exceptionally ripe, healthy fruit, giving the wine both richness and structure. Nicolas Rossignol, a respected vigneron, crafts his wines with meticulous care, fermenting with a combination of whole bunches and destemmed berries to extract fine tannins and preserve the grape’s vibrant fruit. Ageing in French oak barrels, of which a portion is new, imbues additional complexity without overshadowing typicity.
The village of Pommard, nestled amidst the rolling hills of the Côte de Beaune, has long been celebrated for producing some of the most muscular and long-lived Pinot Noirs in Burgundy. The region’s cool continental climate is tempered by good sun exposure on the mid-slope vineyards, ensuring full ripeness while retaining elegance and freshness. The iron-rich clay soils in Pommard are responsible for the appellation’s distinctive firm tannic backbone and earthy, spicy minerality. Historically, Pommard’s deep-coloured wines have been sought after by collectors and gourmets alike.
For food pairings, this Pommard excels alongside hearty Burgundian classics such as coq au vin or beef bourguignon, where its robust tannins and savoury notes cut through the richness of the dish. Roast duck with cherry sauce or rack of lamb roasted with Provençal herbs also make excellent companions. For a local touch, try it with a terrine de gibier or aged Époisses cheese; the wine’s structure and complexity will marry beautifully with these assertive flavours.
To fully appreciate this wine’s bouquet of black cherry, damson, violet, and hints of forest floor, decant it for an hour before serving. The ideal tasting temperature lies between 15-17°C, allowing both its aromatic finesse and underlying power to fully reveal themselves.
