Vinification here follows a classic Burgundian approach with gentle extraction, partial or full whole cluster fermentation depending on the vintage character, and maturation in French oak barrels to bring subtlety and texture without overwhelming the vivid fruit. The 2021 vintage is marked by delicacy and vibrancy due to challenging weather through spring and early summer, which resulted in lower yields but fantastic aromatic purity.
