The 2020 Gevrey-Chambertin “Les Seuvrées” from Domaine Hubert Lignier is a beautifully expressive red Burgundy, crafted from 100% Pinot Noir grapes. This cuvée hails from vineyards located just below the grand crus of Gevrey-Chambertin, benefitting from similar soils and microclimate, which contribute to its finesse and depth. The 2020 vintage stands out for its balance, with a relatively warm growing season yielding ripe fruit and refined tannins. Vinification at Hubert Lignier is artisanal and low-intervention: fermentations are made with indigenous yeasts, and the ageing process in French oak barrels (with a judicious use of new oak) gently frames the wine without overwhelming the varietal purity.
Gevrey-Chambertin is one of the most prestigious villages of the Côte de Nuits in Burgundy, known for producing Pinot Noir with structure, intensity, and impressive ageing potential. The region’s marl and limestone soils combined with a cool continental climate yield wines with a remarkable mineral backbone, fine tannins and fresh acidity. Gevrey-Chambertin has a storied history, being home to nine grands crus and numerous highly esteemed premier crus, yet even its village-level wines offer complexity and character, especially from top producers and sites.
This wine’s compelling bouquet of black cherry, wild strawberry, subtle spices and earth makes it a natural partner for refined, earthy dishes. Classic pairings include roast duck breast with a cherry or raspberry sauce, pigeon with mushroom duxelles, or simply a traditional coq au vin. Its structure and moderate tannins also allow it to shine with game birds or matured cheeses from the region, such as Epoisses or Comté. For a vegetarian option, mushroom risotto with black truffle would complement its nuanced aromas brilliantly.
To appreciate its full aromatic range and elegant texture, serve this wine at 15-17°C. If consumed in its youth, decanting for around an hour is recommended to help open up its bouquet. The 2020 Les Seuvrées is already charming but will reward further cellaring, gaining complexity and depth over several years.
