Domaine Aux Moines 2022 from the Savennières-Roche-aux-Moines AOC is an exceptional expression of the Chenin Blanc grape, whose presence dominates this remarkable part of the Loire Valley. The 2022 vintage benefits from a temperate climate and a combination of schist, sandstone, and volcanic soils which are characteristic of this specific terroir. Vines here are cultivated with meticulous attention, often organically or biodynamically, and fermentation usually occurs with indigenous yeasts, allowing the minerality and complexity of Chenin to come through. The result in this wine is a nose bursting with notes of quince, yellow apple, acacia flowers, and subtle hints of beeswax.
