Vinification generally features gentle extraction and maturation in oak barrels, allowing the rich black fruit, violet, and spice notes characteristic of Cahors to shine while rounding out the tannic structure for which the appellation is famous.

Cahors, nestled in the Southwest of France on the limestone plateau (causse) and slopes overlooking the Lot River, is renowned for its deep-rooted viticultural history dating back to Roman times.
