Cercial, also known as Sercial on Madeira, is a distinguished white grape variety renowned for its role in producing vibrant, high-acidity wines. Predominantly cultivated on the island of Madeira and to a lesser extent in mainland Portugal, Cercial exhibits a refined aromatic profile, characterised by fresh citrus notes, green apple, and a marked minerality, complemented by subtle hints of almond and dried herbs. On the palate, it presents a crisp, linear structure with lively acidity, offering flavours of lemon zest, quince, and saline undertones that contribute to its refreshing and lingering finish.
Cercial’s principal home is the cooler, elevated vineyards of Madeira, where it is vinified into the iconic Sercial style of Madeiran fortified wine. These wines are lauded for their bone-dry, razor-sharp character and exceptional ageing potential. In mainland Portugal, especially in Dão, Cercial is utilised in dry white blends, imparting vivacity and structure.
Classic Cercial wines pair superbly with a wide variety of dishes. Sercial Madeira shines alongside shellfish, smoked salmon, and fresh goat’s cheese, while dry Cercial table wines complement sushi, grilled white fish, and light salads enhanced with citrus dressings, making them a versatile choice for refined culinary experiences.
