Albilla is a lesser-known yet distinctive white grape variety, primarily cultivated in the south of Spain, particularly in the regions of Castilla-La Mancha and Andalusia. It has also found prominence in Peru, notably in the production of Pisco. The wines produced from Albilla grapes are renowned for their subtle, refined aromatic profile, typically exhibiting delicate notes of white flowers, stone fruits such as peach and apricot, and underlying hints of citrus zest. On the palate, Albilla wines tend to be medium-bodied with a fresh, lively acidity, offering flavours of ripe pear, yellow apple, and sometimes a gentle almond-like finish. The texture is often elegant, contributing to a clean and lingering minerality.
Albilla is most commonly vinified as a crisp, refreshing varietal white, though it can also feature in blends, adding finesse and aromatic lift. Occasionally, it is used in the production of slightly oxidative or fortified styles, especially in Spain. Ideal food pairings include grilled seafood, ceviche, roasted chicken, or vegetable dishes with Mediterranean herbs. Its bright acidity and nuanced palate make it an excellent companion to light tapas or goat’s cheese, enhancing both the wine and the dish.
