César is an ancient red grape variety traditionally associated with the northern Burgundy region of France, particularly the Irancy appellation in the Yonne department. Renowned for its deep colour and robust structure, César imparts intense aromas of black cherry, wild berries, and subtle earthy undertones, occasionally accompanied by hints of liquorice and spice. On the palate, it delivers firm tannins and notable acidity, lending freshness and longevity, often harmoniously blended with Pinot Noir to balance its natural vigour.
The principal winegrowing area for César is the northwestern sector of Burgundy, most prominently within Irancy, where its presence adds complexity and body to the region’s reds. César-based wines are typically medium to full-bodied, with a rustic charm and pronounced fruit character, often aged in oak to soften their tannic frame and develop savoury nuances.
César pairs well with hearty cuisine, making it an excellent match for grilled red meats, duck confit, game dishes such as venison or boar, and mature cheeses including aged Comté or Epoisses. The vibrant acidity and robust nature also complement rich stews and mushroom-based dishes, highlighting the grape’s affinity for earthy, flavourful fare.
