Mavrud is one of Bulgaria’s most esteemed and ancient grape varieties, known for producing wines of distinctive character and depth. Aromatically, Mavrud typically displays intense notes of ripe blackberries, black cherries, and plums, often complemented by undertones of spice, tobacco, and subtle earthy nuances. On the palate, the grape yields full-bodied wines with robust tannins and fresh acidity, offering a harmonious balance and long, lingering finish. The primary viticultural regions for Mavrud include the Thracian Lowlands, particularly around Plovdiv and Asenovgrad, where the grape thrives in rich, alluvial soils and a favourable continental climate. Styles of wine range from youthful and vibrant reds with juicy fruit character to more complex, oak-aged expressions showcasing layered flavours and significant ageing potential. Mavrud’s versatility also allows for premium blends and, less commonly, limited rosé productions. When it comes to food pairings, Mavrud’s depth and structure make it an excellent companion for grilled red meats, hearty stews, game birds, and mature hard cheeses, while its spicy notes beautifully complement dishes featuring aromatic herbs and Mediterranean influences.
