Saperavi is an ancient red grape variety indigenous to Georgia, widely regarded as the country’s flagship varietal. Characterised by its deep, inky hue, Saperavi produces robust wines with complex aromatic and flavour profiles. On the nose, expect an enticing bouquet of dark berries such as blackcurrant and blackberry, layered with notes of plum, cherry, and subtle hints of liquorice, spice, and earthy undertones. The palate reveals rich, concentrated fruit balanced with refreshing acidity and firm yet supple tannins, often accompanied by nuances of dark chocolate and tobacco.
The primary regions cultivating Saperavi are the Kakheti and Kartli regions of eastern Georgia, though plantings are also found in Russia, Ukraine, and more recently, Australia and the United States. Saperavi is versatile in style; it is crafted into both dry and semi-sweet still wines, as well as traditional qvevri-aged versions that showcase pronounced structure and texture.
Saperavi’s bold character makes it an excellent pairing for hearty dishes. Recommended matches include grilled or roasted red meats, game, lamb, aged cheeses, and richly spiced Georgian fare such as kharcho or chakapuli, where the wine’s assertive nature complements robust and savoury flavours.
