Zéta is a distinctive Hungarian grape variety, primarily cultivated in the renowned Tokaj wine region. Originally known as Oremus, this crossing of Furmint and Bouvier was developed to ripen early and resist botrytis, making it well-suited for the production of luscious dessert wines. Zéta offers an elegant aromatic profile, with delicate notes of white peaches, ripe pears, citrus blossom and subtle floral undertones. On the palate, it delivers a refined balance of lively acidity and supple sweetness, often accompanied by hints of honey, apricot, and candied orange peel.
Zéta is mainly used in Tokaji Aszú blends, where it contributes fresh fruit complexity, aromatic delicacy and harmonious structure. It occasionally appears in varietal late-harvest or dry styles, though its true strength lies in sweet wines marked by botrytised concentration. Zéta pairs exceptionally well with foie gras, blue cheeses, fruit-based desserts, or as a refined companion to roasted poultry with stone fruit glazes.
