Stavroto is a distinctive red grape variety predominantly cultivated in certain Greek regions, particularly within the mountainous zones of Thessaly and central Greece. Wines produced from Stavroto are notable for their deep ruby hue and a pronounced aromatic profile, characterised by notes of ripe red cherry, blackcurrant, and subtle hints of dried herbs and violet. On the palate, Stavroto exhibits a medium to full body, balanced acidity, and fine-grained tannins, delivering flavours of forest fruits, plum, and a gentle spice on the finish.
Typically, Stavroto is vinified as a varietal wine or blended with other local grapes, resulting in both fresh, youthful reds and more structured styles intended for moderate ageing. Its versatility allows for the production of wines ranging from easy-drinking, fruit-forward expressions to complex, oak-matured offerings with greater depth and finesse.
Stavroto pairs harmoniously with a variety of dishes. Notably, it complements grilled lamb, roasted game meats, rich tomato-based stews, and hard Greek cheeses. The grape's inherent freshness and refined tannins also make it an excellent match for Mediterranean cuisine, including aubergine dishes and herbed vegetable casseroles.
