Xinomavro is a renowned indigenous red grape variety of Greece, predominantly cultivated in the regions of Naoussa, Amyndeon, Goumenissa, and Rapsani in Northern Greece. Distinguished by its deep colour and robust tannic structure, Xinomavro offers a complex aromatic profile, often displaying notes of sun-dried tomato, ripe red berries, olive paste, spice, and earthy undertones, complemented by hints of dried herbs and tobacco with ageing. On the palate, it presents high acidity, grippy tannins, and a remarkable capacity for longevity, making it one of Greece’s most age-worthy varietals.
The typical wine styles range from structured, cellar-worthy reds—especially in Naoussa and Rapsani—to fresher, lighter expressions and even elegant rosés, primarily in Amyndeon. Some producers also craft sparkling and blanc de noirs versions, expanding its versatility.
Xinomavro pairs exceptionally well with a variety of traditional Greek dishes such as slow-cooked lamb, moussaka, braised meats, game, and tomato-based stews. Its vibrant acidity and savoury character also make it a fitting partner for charcuterie, hard cheeses, and Mediterranean vegetable dishes, allowing for both classic and creative food pairings.
