Zelen is an indigenous white grape variety found almost exclusively in Slovenia's Vipava Valley, where it thrives in the region’s diverse microclimates and marl soils. This rare variety yields delicate, pale lemon-coloured wines with a subtle greenish tinge, reflecting its name, which means “green” in Slovenian. The aromatic profile is refined, offering fresh notes of citrus blossom, green apple, pear, and gentle hints of Mediterranean herbs. On the palate, Zelen displays vibrant acidity and a characteristically light to medium body, accompanied by flavours of white peach, green citrus, and a touch of almond on the finish.
Winemakers typically vinify Zelen in stainless steel to preserve its pure fruit character, resulting predominantly in crisp, unoaked dry white wines. It is occasionally crafted with brief skin contact for increased texture, but oak influence is rare. Zelen’s freshness and mineral undertones make it a versatile partner at the table. It pairs exceptionally well with seafood, especially grilled fish and shellfish, as well as light starters, soft cheeses, and salads featuring herbs or asparagus.
