Rebula, also known as Ribolla, is a white grape variety most prominent in Slovenia, particularly in the Goriška Brda region, as well as the Friuli-Venezia Giulia area of north-eastern Italy. Its wines are renowned for their bright, straw-yellow hue and beguiling aromatic profile, often delivering notes of citrus blossom, green apple, ripe pear, lemon zest, and a subtle mineral undertone. On the palate, Rebula typically offers lively acidity, a crisp, refreshing mouthfeel, and a dry, medium-bodied structure. High-quality examples may display hints of peach, almond, and herbaceous nuances, culminating in a pleasantly lingering finish.
The grape lends itself to a variety of styles, ranging from light, youthful whites to more complex, barrel-matured interpretations, and extended skin-contact “orange” wines. The latter are particularly expressive, showcasing pronounced tannins and layers of dried fruit and spice.
Rebula’s vibrant acidity and mineral backbone make it an excellent partner for an array of dishes. It pairs especially well with seafood—shellfish, grilled fish and calamari—as well as light poultry, vegetable risottos, and soft cheeses. Matured or orange-style Rebula can also complement richer fare, such as roast pork or game birds.
