Trollinger, known as Schiava in Italy, is a red grape variety highly regarded in Württemberg, Germany. It produces wines with a delicate, fresh character. The aromatic profile is distinctly light and fruity, featuring vibrant notes of red cherry, wild strawberry, and raspberry, often accompanied by a subtle hint of almond or floral tones, such as violet. On the palate, Trollinger is typically light-bodied with crisp acidity and very soft, unobtrusive tannins. This makes for an easy-drinking style that is rarely oaked and best enjoyed young.
The primary region for Trollinger cultivation is Württemberg, where it has become the local speciality. Outside of Germany, the grape is also grown to a lesser extent in South Tyrol in northern Italy. The wines are most commonly vinified as single varietals, especially as youthful, unoaked reds, though fresher rosé styles also occur.
Trollinger pairs exceptionally well with light dishes such as cold cuts, poultry, grilled sausages, and mildly seasoned pasta. It is also a charming companion for traditional Swabian fare like Maultaschen or onion tart. When served slightly chilled, it proves refreshingly versatile, making it an excellent choice for summer dining or casual gatherings.
