Mansois, more widely known as Fer Servadou, is a distinctive red grape variety predominantly associated with the South-West of France, notably the Marcillac appellation in the Aveyron region, as well as pockets in Gaillac and the wider Sud-Ouest. This grape produces wines with a vibrant, deep ruby colour, and a striking aromatic profile showcasing redcurrant, wild strawberry, black pepper, and subtle earthy undertones, often accompanied by hints of violet. On the palate, Mansois wines are recognised for their fresh acidity, moderate tannin structure, and lively fruit character, sometimes underscored by a gentle minerality reflective of their terroir. The most typical expressions are youthful, medium-bodied reds, designed to be enjoyed within a few years of release, though select producers craft more structured versions with potential for short-term ageing. Mansois pairs beautifully with regional specialities such as confit de canard, grilled sausages, and charcuterie, as well as lighter game dishes, roast poultry, and aged cheeses.
