Chatus is an ancient red grape variety native to the Ardèche region in south-eastern France, particularly thriving on the granite and schist soils of the Cévennes foothills. Renowned for its distinctive personality, Chatus delivers a vibrant aromatic profile, often expressing notes of wild blackberry, blackcurrant, and ripe cherry, underpinned by hints of pepper, liquorice, and delicate floral touches. On the palate, the wines are assertive and structured, with prominent tannins and a remarkable freshness, resulting in a lingering, balanced finish.
Primarily cultivated in the high-altitude vineyards around the Ardèche, Chatus is made in both traditional and modern styles. Classic examples are aged in oak, exhibiting enhanced spiciness and a subtle smokiness, while more contemporary approaches favour fruit-driven, youthful expressions.
Chatus wines excel when paired with robust cuisine. They complement grilled or roast red meats, game, and rich stews, as well as mature cheeses such as Comté or aged Cantal.
