Traditionally cultivated alongside Coda di Volpe, Caprettone has gained recognition for its individuality and character when vinified alone.

On the nose, Caprettone displays a delicate yet expressive aromatic profile, often showing scents of white blossom, acacia, citrus peel, and subtle herbal notes, sometimes with a hint of wild fennel and wet stone. On the palate, it offers crisp acidity balanced by a medium body, with flavours ranging from ripe pear and green apple to lemon zest and saline mineral undertones, reflecting its volcanic terroir. Texturally, Caprettone wines present a pleasing roundness, sometimes complemented by a touch of almond on the finish.

Most typically, Caprettone is vinified as a single varietal dry white wine, but it can also contribute freshness and structure to the famed Lacryma Christi del Vesuvio DOC blends. These wines pair elegantly with seafood such as grilled prawns, calamari, and shellfish, as well as light pasta dishes, summer salads, and mozzarella di bufala. Their refreshing minerality also makes them an excellent match for Mediterranean vegetable preparations and delicate white fish.
