Asprinio is a distinctive white grape variety native to the Campania region in southern Italy, particularly renowned around the province of Caserta. This ancient grape is celebrated for producing wines with a uniquely vibrant profile, typically showcasing pronounced acidity, light to medium body, and a refreshingly crisp character. Aromatically, Asprinio wines deliver bright citrus notes—lemons, limes and green apple—accompanied by subtle hints of wild herbs and white flowers. On the palate, these wines often display energetic minerality and a very clean, zesty finish, making them exceptionally lively and invigorating.
Primarily cultivated around Aversa and in the broader Caserta area, Asprinio is most famously vinified in both still and lightly sparkling (frizzante) styles. The sparkling expressions, often made via the traditional method, highlight the grape’s natural acidity and effervescence.
Asprinio pairs beautifully with the regional cuisine of Campania. Its vibrant acidity and fresh profile complement seafood dishes, particularly shellfish and oysters, as well as light appetisers, fresh cheeses, and fried vegetable antipasti. Its palate-cleansing qualities also make it a fine match for richly flavoured, tomato-based pasta dishes typical of the southern Italian table.
