This rare grape delivers wines with a brilliantly pale straw colour and lively, persistent mousse when vinified as a sparkling wine. Aromatically, Cococciola exhibits fresh, vibrant notes of crisp green apple, citrus blossom, and pear, accompanied by delicate herbal undertones and subtle hints of white flowers. On the palate, it is renowned for its refreshing acidity, clean linear structure, and distinctive minerality, resulting in an invigorating, thirst-quenching style.

Cococciola is most commonly crafted as a still white wine or a sparkling version, either alone or occasionally blended with other local varieties. The style typically ranges from light-bodied, crisp, and youthful to more textured examples displaying greater depth and body.
