Savagnin is a distinctive and ancient white grape variety, revered predominantly in the Jura region of eastern France. Renowned for its pronounced aromatic complexity, it reveals striking notes of green apple, citrus peel, hazelnut, and a subtle whiff of spice. On the palate, Savagnin delivers a vibrant acidity and notable minerality, often accompanied by layers of savoury, oxidative characteristics—particularly in traditional styles. This grape excels in the Jura, most famously as the sole variety used in the region’s iconic Vin Jaune, aged under a veil of yeast, resulting in a dry, nutty wine with remarkable depth and ageing potential. Beyond Vin Jaune, Savagnin also produces excellent dry whites, oxidative “sous voile” wines, and, less commonly, late-harvest styles.
The grape pairs exceptionally well with regional specialities such as Comté cheese, chicken with morel mushrooms, and creamy fish dishes. Its structure and complexity make it a superb match for richer fare like veal in cream sauce or hearty vegetable gratins. For the adventurous, try Savagnin alongside spicy Asian cuisine, where its nutty character and vivid acidity offer an intriguing contrast.
