Albillo Mayor is a distinguished white grape variety predominantly cultivated in Spain’s Ribera del Duero and Madrid regions, where it has recently experienced a renaissance among quality-minded growers. On the nose, Albillo Mayor exhibits an enticing bouquet of white flowers, green apple, ripe stone fruits such as peach and apricot, and hints of honey and dried herbs. The palate is characterised by a gentle acidity, a rounded, almost creamy texture, and subtle notes of citrus, melon and almond, often complemented by a fine mineral undertone, especially when grown on limestone soils.
Traditionally, Albillo Mayor is used in both blended and varietal wines, producing elegant, medium-bodied still whites that display both freshness and depth. Increasingly, winemakers are exploring its potential in oak-aged styles, where it develops further complexity with notes of vanilla, toast, and silky mouthfeel. Sparkling versions, though rare, can also be found.
Albillo Mayor pairs beautifully with tapas, grilled seafood, roasted chicken, mild cheeses, and Mediterranean cuisine.
