The grape variety Listán Blanco

Listán Blanco, internationally recognised as Palomino Fino, is a white grape variety deeply rooted in Spain, particularly the Canary Islands and Andalusia. Renowned for its subtle yet distinctive aromatic profile, Listán Blanco typically displays delicate notes of green apple, pear, citrus zest, and gentle floral undertones, complemented by hints of saline minerality that reveal its oceanic influences. On the palate, the wines are generally fresh and light-bodied, with crisp acidity and a clean, savoury finish that enhances their refreshing character.

In terms of regional focus, Listán Blanco thrives on the volcanic soils of Tenerife and other Canary Islands, where ungrafted old vines contribute complexity and texture to the wines. It also plays a major role in the production of Sherry in Jerez, Andalusia, where the variety’s neutrality and balance are highly valued.

Listán Blanco is versatile in winemaking, producing styles ranging from dry, vibrant still wines to oxidative, complex fortified wines such as Fino and Manzanilla Sherry. The grape’s bright acidity and subtle savoury notes make it an excellent partner for a variety of dishes, including grilled seafood, shellfish, mild cheeses, tapas, and light poultry preparations. Its saline edge particularly complements maritime cuisine and salty appetisers.
