Baladí-Verdejo is an indigenous Spanish grape variety, primarily found in the regions of Castilla y León, particularly within the historic vineyards of Rueda. Often mistaken for the more widely known Verdejo, Baladí-Verdejo boasts a unique aromatic profile and distinct personality. The nose reveals delicate notes of white blossom, green apple, pear, and subtle hints of fresh herbs, occasionally accentuated by nuances of fennel and citrus peel. On the palate, the wines typically offer lively acidity, a medium body, and a pleasing minerality, with flavours echoing ripe orchard fruits, zesty citrus, and a touch of stone fruit on the finish.
Baladí-Verdejo is usually vinified into crisp, refreshing dry whites, often consumed young to fully appreciate their vibrancy and aromatic expression. However, when barrel-fermented or aged sur lie, the wines can develop greater complexity and richness, with added layers of spiced oak and creamy texture.
This variety pairs beautifully with seafood dishes such as grilled prawns, calamari, and scallops, as well as light salads, asparagus, or goat’s cheese. Its zesty character also complements mildly spiced Asian cuisine and herbaceous poultry preparations, making it a versatile choice for modern gastronomy.
