Sylvaner (known as Johannisberg in Switzerland) is a white grape variety celebrated for its subtlety and finesse. Typically pale lemon in colour, it offers a delicate yet expressive aromatic profile, featuring notes of green apple, fresh pear, and white peach, often accompanied by gentle herbal or floral undertones such as chamomile and nettle. On the palate, Sylvaner is appreciated for its refreshing acidity, medium body, and a slightly mineral finish, creating an overall sense of purity and elegance.
The principal regions for Sylvaner cultivation include Alsace in France, particularly around Mittelbergheim and the Bas-Rhin, as well as Germany’s Franken region, where it is highly esteemed. In Switzerland, it is widely grown in Valais under the name Johannisberg.
Sylvaner wines are typically unoaked and produced in both dry and off-dry styles, ranging from crystalline, zesty expressions to slightly richer, textured examples. On occasion, late harvest or sweet styles present a more opulent profile while retaining balance and freshness.
This versatile wine pairs exceptionally well with delicate starters, asparagus dishes, shellfish, freshwater fish, and soft cheeses. Its crisp character also complements light vegetarian cuisine, making it a favourite choice for spring and summer meals.
