Zalema is a distinctive white grape variety indigenous to south-western Spain, particularly thriving in the DO Condado de Huelva region of Andalusia. This vigorous cultivar produces wines characterised by a pale straw colour and a delicate, floral bouquet. On the nose, Zalema typically reveals subtle notes of green apple, pear, white peach and citrus, accompanied by faint nuances of almond blossom and honey. The palate is crisp and fresh, featuring balanced acidity, light to medium body, and a mildly saline finish, reflecting its proximity to the Atlantic coast.
While Zalema is most commonly vinified as a dry white wine, it is also used as a base for oxidative or fortified wine styles such as the region’s renowned Condado Pálido and Condado Viejo.
