Pais, also known as Mission in North America and Criolla Chica in Argentina, is a red grape variety deeply rooted in the viticultural heritage of Chile. The aromatic profile of Pais is characterised by vibrant red fruit notes, including strawberry, cherry, and raspberry, often complemented by subtle floral nuances and hints of dried herbs or earth. On the palate, Pais typically produces light to medium-bodied wines with refreshing acidity, smooth tannins, and a rustic yet charming finish. While occasionally displaying a slightly savoury or peppery undertone, the wines are renowned for their freshness and drinkability rather than overt complexity.
The primary region for Pais is the southern part of Chile, particularly in Maule, Bío-Bío, and Itata Valleys, where many old, dry-farmed bush vines still thrive. Traditionally, Pais was used for simple, everyday wines, but in recent years, it has gained renewed attention from quality-focused producers exploring both youthful, fruity reds and brighter, modern expressions, including innovative methods such as carbonic maceration.
Pais pairs well with a broad range of foods, notably grilled poultry, pork dishes, empanadas, mild cheeses, and vegetable-based stews. Its lively acidity and delicate structure also make it a suitable match for light tapas and Mediterranean fare.
