Bouchet, more widely recognised as Cabernet Franc in France’s Bordeaux region, is a red grape variety celebrated for its aromatic finesse and adaptability. Its aromatic profile typically reveals vibrant notes of ripe red berries such as raspberry and redcurrant, intertwined with floral undertones of violet and nuances of graphite, bell pepper, and subtle spice. On the palate, Bouchet delivers medium body with lively acidity and moderate tannins, allowing for elegance and freshness that make it highly versatile.
Primarily cultivated in the Right Bank of Bordeaux—most notably in Saint-Émilion and Pomerol—Bouchet also thrives in the Loire Valley and select New World regions. The grape is frequently used in blends with Merlot and Cabernet Sauvignon, enhancing complexity and structure, but can also produce expressive single-varietal wines.
Typical wine styles range from youthful, fruit-driven reds to more structured and age-worthy examples displaying earthy and savoury characteristics. Bouchet pairs exceptionally well with a variety of dishes; its freshness and subtle herbal notes complement roasted poultry, grilled lamb, charcuterie, and mature cheeses. It is a superb choice for dishes featuring mushrooms or Mediterranean herbs, harmonising beautifully with both classic and contemporary cuisines.
