Fié Gris, also known as Sauvignon Gris, is a distinctive grape variety cherished for its nuanced complexity and aromatic elegance. In the glass, it offers a delicate bouquet combining white peach, citrus zest, and subtle herbal nuances, underscored by hints of wildflowers and a faint smokiness. On the palate, Fié Gris wines are typically medium-bodied with a lively acidity, displaying flavours of gooseberry, grapefruit, and ripe pear, often complemented by mineral undertones and a graceful, lingering finish.
Though now rare, Fié Gris thrives particularly in the Loire Valley, especially in the Touraine and Cheverny appellations, where vignerons have revived its cultivation due to its unique sensory profile. The grape is primarily used for dry white wines, which showcase its aromatic vibrancy and refined palate. Some producers also experiment with barrel ageing, imparting additional texture and complexity.
Fié Gris pairs beautifully with a variety of dishes. Its crisp acidity and expressive aromatics make it an ideal partner for seafood, such as grilled scallops or oysters, as well as lighter poultry preparations and fresh goat cheese. Herb-driven vegetable dishes and Asian-inspired cuisine also complement its subtle herbaceous notes.
