Sacy is a rare and distinctive white grape variety, predominantly cultivated in the Burgundy and Auvergne regions of central France. Wines made from Sacy exhibit a delicate aromatic profile, with subtle notes of green apple, white pear, and fresh citrus blossom, often complemented by a gentle mineral undertone reminiscent of wet stone. On the palate, Sacy wines are light-bodied with crisp acidity, delivering refreshing flavours of lemon zest, green melon, and a slight herbal nuance, resulting in a very clean and lively finish.
The Sacy grape is most commonly found in the Appellations of Saint-Pourçain and Yonne, where it is either bottled as a single varietal or blended, particularly with Chardonnay and Aligoté, to enhance freshness and finesse. Typical wine styles include dry, unoaked whites that emphasise purity and vibrancy, making them ideal as aperitifs or paired with light meals.
Sacy wines pair exceptionally well with a range of dishes such as fresh seafood, oysters, light salads, goat’s cheese, and subtly flavoured poultry. Their bright acidity and restrained alcohol content make them especially suitable alongside lightly seasoned dishes, allowing both the wine and food to shine in harmony.
