Cabernet Jura is a relatively recent Swiss hybrid grape variety, created with the intention of thriving in cooler climates while maintaining resistance to fungal diseases. On the nose, it displays an intriguing aromatic profile marked by red berry notes, such as raspberry and cherry, interwoven with subtle hints of spice and elegant herbal undertones. The palate reveals a medium-bodied structure with soft tannins, lively acidity, and flavours that echo the bouquet, often complemented by nuances of blackberry, pepper and occasionally a gentle earthy finish.
Primarily cultivated in the cooler, alpine-influenced Swiss wine regions, particularly in Aargau and the canton of Zurich, Cabernet Jura’s adaptability to marginal conditions has also sparked interest in neighbouring countries. The grape is largely crafted as a varietal red wine, sometimes blended to add aromatic lift and freshness to other cuvées. Wine styles range from youthful, fruit-driven expressions to those exhibiting more complexity following short barrel maturation.
Cabernet Jura pairs superbly with a range of foods. It is especially well-suited to poultry, pork dishes, charcuterie, and mild cheeses. Its vibrant acidity and fresh, fruity character also make it an excellent match for tomato-based pasta, grilled vegetables and savoury tarts.
