Žilavka is a distinguished white grape variety predominantly grown in the Herzegovina region of Bosnia and Herzegovina, with smaller plantings found in neighbouring Montenegro and Serbia. Renowned for its pale straw colour and crystalline clarity, Žilavka yields wines with an expressive aromatic profile, offering notes of citrus blossom, green apple, pear, and subtle almond undertones. On the palate, Žilavka delivers vibrant freshness with a firm acidity that underpins flavours of ripe stone fruit, lemon zest, and delicate mineral nuances, leading to a lingering, crisp finish.
Typically vinified as a dry white wine, Žilavka can also be crafted into barrel-aged styles, which develop more pronounced complexity and texture, exhibiting hints of vanilla and toast.
