Its name, translating to "partridge’s eye", reflects the wine’s delicate salmon-pink hue.
On the nose, Œil-de-Perdrix presents a refined aromatic profile marked by red berry fruits, particularly wild strawberry and raspberry, often complemented by subtle floral notes and a hint of white pepper. The palate is elegantly balanced, offering refreshing acidity, a light to medium body, and flavours of summer fruits, citrus zest, and occasionally a faint minerality. This results in a harmonious finish that is both crisp and lingering.
Typically, Œil-de-Perdrix is produced in a dry style, emphasising freshness and purity of fruit, though some versions display a touch more roundness and texture.
